Just last week or so, we spotted the strawberry Pop-Tart ice cream sandwich at Carl's Jr. And then just days after that, we spotted the ice cream donut sandwich, another great breakthrough in ice cream sandwiching. Hello, delicious inventions! It got me thinking -- couldn't I make these at home myself? Once I got started with these two, the ideas just kept flooding in. So here's some ice cream sandwich ideas for you to try. Enjoy!

First of all, a recommendation. Rather than letting the ice cream soften enough for you to spread it over whatever, I recommend slicing hard, frozen ice cream right through the carton with your heaviest serrated knife. Then you can trim the ice cream down to the right size. Wrap the sandwich immediately after you make it and put it right back in the freezer.

chicken tendersLet's face it, most of us with kids have way too many chicken nuggets in our lives. Be they from your freezer or ordered from a restaurant menu, there's never a shortage of nuggets. And for good reason -- kids love them. But enough is enough.

These tortilla chip chicken tenders from Virtually Homemade are a great twist on this staple that you'll feel much better about serving to your kids and eating yourself. The tortilla chip coating gives them a nice crispness, and the creamy barbecue sauce is perfect for dipping. They're easy enough to make that kids will have fun helping, and it's a meal the whole family will actually eat without complaint. Win. Win.

Tortilla Chip Chicken Tenders With Creamy BBQ Sauce

1.5 lbs. chicken tenders
1 cup all purpose flour
2 teaspoons paprika
3 cups tortilla chips, ground to a fine meal in food processor
2 large eggs, whisked thoroughly

Creamy BBQ Sauce:

1 cup sour cream
1/2 cup BBQ sauce
1 teaspoon sriracha

Pre-heat oven to 475 degrees F.

Mix flour and paprika. Place flour mixture, tortilla chips, and egg on shallow plates.

Dip each tender in first flour, then egg, and then tortilla chips until thoroughly coated. Place on a baking sheet.

Bake for 15 - 20 minutes. Tenders should be golden brown.

While chicken is baking, thoroughly combine sour cream, BBQ sauce, and sriracha in a small bowl. Serve as a dipping sauce.

cauliflower crust pizzaI have to admit I was a bit wary of cauliflower crust pizza. I've seen it floating all over the web, with people posting pictures of it on Pinterest and raving about it on Facebook, but I'm not a huge fan of the vegetable in general (shh, don't tell my kids), so I wasn't sure what to expect. Honestly though, it's delicious.

There's no flour in the crust at all, which means it's both gluten-free and low-carb, which is awesome. Plus, instead of nutritionally void plain white crust, this is packed with all the vitamins of cauliflower. As for the taste, I won't say it tastes just like regular pizza, but it is incredible in its own way, and people will be shocked when they find out the crust is made of cauliflower. I like this basic recipe from Epicurious, though I like to add more fresh garlic than they suggest. You can then top with the sauce and other fixings you like -- pepperoni and mushroom are my personal favorites.

1/2 LARGE head cauliflower (or 2+ cups shredded cauliflower)
1 large egg
1 cup finely shredded mozzarella cheese (or try another kind!)
1 teaspoon dried oregano
1/2 teaspoon dried minced garlic (or fresh garlic)
1/2 teaspoon onion salt

Shred the cauliflower into small crumbles. You can use the food processor if you'd like, but you just want crumbles, not puree. You'll need a total of about 2 cups or so of cauliflower crumbles (which is about half a large head of cauliflower. Place the cauliflower crumbles in a large bowl and microwave them (dry) for 8 minutes (see Tips below if you do not have a microwave). Give the cauliflower a chance to cool.

Preheat the oven to 450 degrees F. Spray a cookie sheet or pizza pan with nonstick spray (or use a nonstick surface).

In a medium bowl, mix the cauliflower crumbles (about 1 1/2 cups since they shrink after cooking) with the remaining crust ingredients.

Pat the "crust" into a 9 to 12-inch round on the prepared pan. Spray the crust lightly with nonstick spray and bake for 15 minutes (or until golden). Remove the crust from the oven and turn the heat up to broil.

Afterwards, just top the crust and broil for a minute to melt the cheese and heat the toppings/sauce.
