Sides Under $5: Caprese Garlic Bread


Put a new spin on garlic bread with this delicious Caprese topping. Use it as a side for your next Italian meal or a satisfying lunch or vegetarian main course. Print this coupon $0.55/1 – Challenge Butter – (challengedairy.com) to save on butter.

1/2 cup balsamic vinegar –  $0.32
1 loaf Italian bread – $2.50
1/2 stick butter, softened – $0.25
2 cloves garlic, minced – $0.08
8 oz fresh mozzarella cheese, sliced – $1.22
2 tomatoes, sliced – $0.32
1/2 cup chopped basil – $0.30

Directions:

1. To make balsamic reduction sauce: Pour balsamic vinegar into a small saucepan over medium heat. Bring to a boil, stirring occasionally. Reduce heat to simmer. Let cook until vinegar has reduced by half and becomes syrupy. Set aside and let cool.

2. Preheat oven to 400 degrees.

3. Slice bread in half lengthwise and set aside. In a small bowl, mix softened butter with garlic. Spread evenly over both halves of bread.

4. Slice cheese and place evenly all over bread. Place tomato slices on top of cheese and sprinkle with basil. Cook 12 to 15 minutes or until cheese is melted and bread has turned light brown. Remove from oven and drizzle with balsamic sauce. Slice and serve.

Serves: 8

banana bread chocolate chunksBanana bread is one of those delightful desserts-in-disguise-as-breakfast that you can find at just about any grocery store or bakery. But finding a freshly baked piece with the right texture and flavor is a whole different ball game ... I only recently realized this after having insanely awesome banana bread a couple of times on my honeymoon in Hawaii and coming home wanting to procure myself something that resembled what we enjoyed in Maui. Thankfully, the closest thing to Hawaii is ... in my kitchen! Banana bread is a piece of cake (kinda, right?) to DIY! Love it. Love it even more with chocolate chunks. Oh yes.

Chocolate Chunk Banana Bread from BakeorBreak.com

1 & 2/3 cups all-purpose flour1 teaspoon baking soda1/2 teaspoon salt1/2 cup unsalted butter, softened1 & 1/4 cup granulated sugar2 large eggs1 & 1/2 cups mashed overripe bananas (about 3-4 bananas)2 tablespoons sour cream1 teaspoon vanilla extract6 ounces bittersweet chocolate, choppedInstructions

Preheat oven to 350°. Generously grease a 9"x 5" loaf pan.

Whisk together flour, baking soda, and salt. Set aside.

Using an electric mixer on medium speed, beat butter and sugar until light and fluffy. Add eggs, one at a time, mixing well after each addition. Add bananas, sour cream, and vanilla, and continue beating until combined.

Gradually add flour mixture, mixing just until combined. Stir in chocolate.

Transfer batter to prepared pan. Bake 50-60 minutes, or until a pick inserted into the center comes out clean.

Cool in pan for about 10 minutes. Then transfer bread to wire rack to cool completely.
