If you're a peanut butter and chocolate lover, you absolutely need to make this Chocolate and Peanut Butter Whoopie Pie recipe today. And how's this for you: You probably have all the necessary ingredients in your cupboard already. How can you beat that?!

Homemade Peanut Butter Whoopie Pies

Ingredients:

2 cups all-purpose flour1/2 cup unsweetened cocoa powder1/2 cup hot water1 teaspoon vanilla extract1 teaspoon baking soda1 cup white sugar1 cup butter1 egg1 tablespoon butter1 3/4 cups confectioners' sugar1/4 cup peanut butter1/2 cup milkInstructions:

1. Cream together 1 cup of the butter or margarine and the egg. Add 1 cup white sugar, vanilla and hot water. Stir in the flour, cocoa, and baking soda and mix well.

2. Drop from a teaspoon onto cookie sheets and bake at 375 degrees F for 10 to 12 minutes. Sandwich cookies together with Peanut Butter Frosting.

3. To Make Peanut Butter Frosting: Blend 1 tablespoon butter and peanut butter. Stir in confectioners' sugar and add enough milk to make frosting soft enough to spread. Spread between the flat sides of two cookies and sandwich together.

barbecue sauceAs we slide through these final days of summer, we have to embrace the season with everything we have. For many that means lots of meals cooked on the grill. From Labor Day to lazy weekend meals, it's time to squeeze in as many barbecues as you can with family and friends.

Of course, the one thing all good barbecues need is a good barbecue sauce. Sure, you can use a bottled one, but making one from scratch makes it extra good. I love this recipe from The Kitchn. It's sweet, tangy, and really adds flavor. You can use it on chicken, steak, pork, or pretty much anything. 

Sweet and Tangy Homemade BBQ Sauce
(makes about 1 1/2 cups)

Olive oil
1/4 of a red onion, diced
1 clove garlic, minced
1 tablespoon tomato paste
1/2 teaspoon cumin
1 8-ounce can tomato sauce
1/4 cup water
1 tablespoon molasses (honey is a great substitute)
2 tablespoons brown sugar (I prefer dark)
2 teaspoons Worcestershire sauce
1 teaspoon dijon or brown mustard
1 teaspoon salt
A few dashes of hot sauce
Freshly ground pepper

Heat a splash of olive oil in a medium sauce pan over medium heat. Add the onions and cook until soft, about 5 minutes.

Add the garlic and cook for another minute or two.

Reduce the heat to low and add the tomato paste and cumin; mix in with the onion and garlic.

Add the tomato sauce and all remaining ingredients. Stir until combined and heated through. Taste and adjust salt, pepper, or other seasonings as you see fit.

Transfer to a blender or use an immersion blender to blend until smooth. Add more water, a tablespoon or two at a time, if you prefer a thinner sauce.

That's exactly what this Easy Homemade Funfetti Cupcakes recipe is. All you need are a few baking staples, and in no time at all, you'll be able to enjoy a fluffy, blissful, buttercreamy dessert from "scratch." Oh, and bonus: They're super cute, too!

1 2/3 cups all-purpose flour1/2 teaspoon baking powder1/4 teaspoon baking soda1/2 teaspoon salt1/2 cup (1 stick) unsalted butter, melted1 cup granulated sugar1 large egg1/4 cup yogurt (plain or vanilla, Greek yogurt, sour cream)3/4 cup milk (can also use soy milk or almond milk)2 teaspoons vanilla extract1/2 cup sprinkles1 cup (2 sticks) unsalted butter, softened to room temperature3-4 cups powdered (confectioners') sugar1/4 cup heavy cream (or milk or half-and-half)1 teaspoon vanilla extractSalt, to tasteInstructions

Preheat oven to 350F degrees. Line muffin tin with 12 cupcake liners. Set aside.In a medium bowl, mix together flour, baking powder, baking soda, and salt. Set aside. In a large microwave-safe bowl, melt butter in the microwave. Stir in sugar -- mixture will be gritty. Chill in the refrigerator for 1 minute. Stir in egg, yogurt, milk, and vanilla extract until combined. Slowly mix in dry ingredients until no lumps remain. Batter will be thick. Slowly stir in sprinkles, but do not overmix because the sprinkles will bleed their color.Divide batter among 12 cupcake liners (or 24 mini) and bake for 20 minutes or until a toothpick inserted in the center comes out clean. Bake for 8-9 minutes if making mini cupcakes. Allow to cool.To make the frosting, beat softened butter on medium speed with an electric or stand mixer. Beat for about 3 minutes until smooth and creamy. Add powdered sugar, cream, and vanilla extract with the mixer running. Increase to high speed and beat for 3 minutes. Add more powdered sugar if frosting is too thin or more cream if mixture is too thick. Add salt if frosting is too sweet (1/4 teaspoon). Frost cooled cupcakes and top with sprinkles. There may be leftover frosting depending how much you use on each cupcake.Store cupcakes in an airtight container at room temperature for up to 3 days and in the refrigerator up to 7.
